I think you’re just highlighting the difference between something that is impossible and something that is improbable. An impossible event is one that can’t happen. An improbable event is one that is very unlikely to happen.
In this case, there’s no law of physics that says the two bullets can’t collide. So the event is not impossible, it’s simply improbable.
